Steam cod fish and Bayonne ham, ponzu sauce

【Ingredients】
300g Cod fish
10g Ginger
2 tbsp Sunflower oil
2 tbsp Sake or white wine
½ pc Thick slice of Bayonne ham
1 pinch Salt
some Lime zest
【For the Ponzu sauce】
2½ tbsp PRB Gluten Free Reduced Salt Soy Sauce
2 tsp Lime juice
2 tsp Mirin
1 pinch Espelette pepper
【Preparation】
1. Julienne the ginger, spring onions and ham.
2. With a brush, put a thin layer of sake on the fish and season with salt. Set aside for 10 minutes.
3. Boil the water of the pressure cooker. Add the ham and ginger on the fish. Place the fish in a bowl. Steam over high heat for 7 minutes.
4. When the fish is ready, remove the water that came out of the fish. Then place the julienned spring onions on top.
5. Heat the oil in a saucepan over high heat for 2 minutes.
6. Sprinkle the hot oil on the fish and pour Ponzu sauce on it. Grate a little lime zest over the fish before serving.
